      <image:title>EMIGH-EMP - Emigh lamb</image:title>
      <image:caption>Located in the dry hills near the delta of the Sacramento River, the Emigh family has been raising sheep and cattle since the mid 1800s. Today Martin and his children continue to carry on the family tradition of sustainable ranching, providing us with some of the tastiest grass fed and finished lamb we have tried. Emigh raises lambs that are a cross from two different breeds, Ramboulliet and Suffolk, which are both bred for meat. Raised on irrigated pasture, and fed an all grass diet after weaning from their mothers, the lambs spend their days munching on alfalfa until they reach harvest weight at about one year. The lambs are humanely harvested and processed at a USDA inspected plant, and then shipped whole to the shop for us to process. Typically we see whole lambs in the range of a 60-75 pound hanging weight. For any lamb fans in the house the mild, sweet, earthy flavor of these beautiful Suffolk cross is sure to be a hit. We are proud to partner with Emigh Lamb and highlight their lamb in the form of roasts, chops, steaks and sausages.</image:caption>

      <image:caption>As the name states. It’s from Arizona. It’s grass fed. And finished. 100%. Always. Our beef is sourced and slaughtered with out partners at AZ Grass Raised Beef. They proudly source from over three dozen different ranches around Arizona. A majority of them to the north and northeast along the Colorado plateau, with a few ranches down in the higher elevations of the southeastern Arizona. Many of them are owned and operated by Hopi and Navajo and grazed upon their respective reservations. While the ranches, ranges and grasses vary across the state, our sourcing standards do not. Every cow and cowboy jumps hoof through hoop, boasting certification from The American Grassfed Association. The AGA ensures ranchers are held to the highest standards in regard to animal health and welfare, all the while practicing responsible land management and regenerative grazing practices. Our slaughter house aka Boutique Processing Plant (correct verbiage for guests) is USDA certified and located in Chino Valley, just outside Prescott and about two hours from the Meat Market. Depending on the week, they slaughter around thirty cows, resulting in a much slower, thoughtful process than the average US slaughterhouse processing anywhere between 10-400 cows an hour. Our cows our slaughtered on Monday, Wednesday and Friday, processed throughout the week, and we pick it up from the plant every Thursday. Depending on the season we bring in 1-2 whole cows a week. Thanks to our partnership, we are generally allowed the option to purchase specific cuts by the case from Az Grass Raised Beef. These cuts include but are not limited to Tri tip, Hanger, Filet Mignon, Skirt, Bavette, Top Round and Picanha. We dry age all Ribeyes, Striploins (NY) and Sirloins for a minimum of 30 days in our walk in. This reduces moisture in the steaks, breaks down proteins (makes it more tender) and intensifies the grassy, earthy notes that make our beef so delicious. All of our beef is hormone and antibiotic free. Within six months after birth, they are inoculated with a vaccine to blackleg - a fatal bacterial disease. We are lucky to live in a state capable of nurturing such fantastic beef and we are proud to partner with AZ Grass Raised.</image:caption>

      <image:caption>Two years before the Mexican-American war that led to California’s statehood, 18,000 acres of dry land “Llano Seco” just south of Chico was granted by the Mexican Governor to an Austrian trapper- cause that’s how things worked back then. A few years later and shortly after the civil war ended, the land grant was purchased by a San Francisco banker turn rancher. Now, six generations of responsible land stewardship later - Rancho Llano Seco continues a prideful tradition of sustainable land and animal management. The pigs themselves are a cross breed of Duroc, Yorkshire and Landrace. They are fed a blend of Non-Gmo vegetarian grain and legumes- 75% of which is actually grown on the ranch itself. Pretty freaking cool if you ask us. They are pasture raised. That means they spend their days between open hoop houses and pastures as they see fit. As you might imagine, the pigs live a life free of growth hormones, antibiotics, or any other nonsense- just an organic diet, water and pure California sunshine. They are also part of a “zero waste” practice where the bedding (straw &amp; pig waste) is composted and applied to the ranch’s open cow pastures (they raise cows too, but we’re covered there). “Piglet to Parilla” or “Birth to BBQ” is the way Rancho Llano Seco runs the show. They oversee every step of production and their holistic and humane approach has earned them certification from the Global Animal Partnership- an organization with complex, strict standards for animal welfare. They slaughter every Thursday at their small scale abattoir just up the road from where the pigs are raised. They hang till Monday and arrive at the shop by refrigerated truck every Thursday. On average and season depending, we get between 2-4 pigs a week. We are proud to call Rancho Llano Seco partners and lucky to sell their beautiful pigs.</image:caption>

      <image:caption>Rumor has it “Bad Bad Leroy Brown” was actually based on Dave, owner and operator of Two Wash Ranch. Why? Well because he is the baddest man in the whole damn town. An experienced auto technician from Chicago (So was Leroy), Dave headed west in 1999 and landed on a five acre chunk of desert in New River, just north of town. What do you do with five acres of beautiful desert landscape? Get some chickens of course. What started out as a hobby turned to an excess of delicious eggs, which turned into a side hustle at the farmers market, which turned into a main hustle for chefs and restaurants, which turned into a full on poultry farm. Today, Two Wash Ranch is the gold standard for local poultry in Phoenix. Alongside laying hens and broiler chickens, his collection of birds includes duck, french guinea fowl, cornish hen, turkey, and if we had to guess probably a peacock or two. Our chickens are slaughtered and clean on Monday and Tuesday and delivered Wednesday afternoon. Depending on the season, we bring in between 80-140 whole birds. The birds are completely free of hormones and antibiotics, but currently feed on GMO grain. We’re working with Dave on a solution to and price point that make organic feed work. And if you’re still not convinced he’s Leroy Brown, ask him about the time he wrestled that hundred pound bobcat to the ground, protecting the flock at all costs.</image:caption>
